Ginger Infused Rum and Vodka

I wanted to share an amazing experience I had on a trip to the beautiful island of St. Martin. It is one of my favorite places to be on earth. The warm breeze, the relaxed atmosphere, awesome seafood, breathtaking beaches, nightlife etc. 

A group of close friends, hubby and I, make it a point to travel there every year. It's become our go to place to have fun, lay back and relax. The last time we were there, we found this amazing beach restaurant that we couldn't get enough of...The staff was amazing, the food was delicious and the drinks...wow. After each of our meals (we stayed there many days, alllll day long), we would get a free after lunch, dinner shot of infused rum. The restaurant made their own infused rum with different flavors and fruits. One in particular stood out with our group. It was the ginger infused rum. The taste had just enough, ginger, rum and sweetness to it. It was just so special and I'd like to share it with you.

Things you will need:
  1. One cup fresh unpeeled ginger
  2. Two cups clear rum
  3. Simple syrup (or dissolved sugar)
  4. Clean recycled bottle
Scrub and clean the ginger roots and pat dry. Do not peel-some say the skin have most of the flavors...
 
Cut off all the knobs and ugly dark ends of the ginger root.
I have two cups of sliced ginger because I also infused one cup of it with vodka. Use more or less depending on your love for ginger...cut the pieces small enough to fit through the opening of your chosen bottle.
This is the vodka version. I would have used an almost full bottle of vodka if I had one but this bottle only had about two and a half cups of vodka in it. Good enough.
Remove the pourer carefully. The smaller bottles have a hard plastic pourer and it is really difficult to remove. This one below was a soft plastic and flexible enough to wedge out.
I dissolved four table spoons of brown sugar with distilled water. I used less water as possible because who wants water in their rum right? You can probably dissolve the sugar in a bit of rum. Maybe. Microwave it for 30 seconds or more. It should be completely dissolved as shown below. Add more sugar if you wish. You can't go wrong...
Vodka and rum version. Here are my recipes for each. Add one cinnamon stick and or lemon peels to the clear rum and ginger mix if you want. It is an amazing combination. Let it sit in the refrigerator for about a month. Shake the bottle every day if you can. You can infuse rum/vodka with almost any fruit-This new hobby of mine can get very addictive. You can even make these for gifts (for that special host that has it all).
